Foodie Pen Pals #3 February 2012


 A lot has happened in the last week. One thing is that I had to tell my job that this is going to be the last season dancing with the company. I'll go into more details later. It's a bittersweet thing because I have loved dancing my job for the last six years but it's time for a change. Ready to move on, but sad to leave such a great company and people.

Another thing is that we had a sad event happen in my husband's family this weekend. I'm not going to go into any details but we are grieving. I haven't had to deal with a lot of loss in my lifetime and I'm not the cheeriest person right now.


But it is the reveal day for the February Foodie Pen Pal program. I received my package this month from Missy Mowry. When her package came in the mail I was so excited to open it up. I think someone else was even more excited.....




Siena went crazy for the stuff in the box! I think the spices in a soup and dip mix had her acting like she had sniffed a bunch of catnip. She played for almost an hour with all of the tissue paper! Missy sent me a nice package which she thought was a random one but I thought it was great! 

I've always wanted to buy Green & Black Hot Chocolate but have never gotten around to it. She also included some soy milk powder to mix it with. I can't wait to try this!
A selection of savory things two which were from Kentucky: Bayou Red Beans & Rice and Delicious Dip Mix. Plus, Jane's Krazy Mixed-Up Salt (another thing I've always wanted to buy!).

I can't wait to try this next item: Cherry Preserves with Lazzaroni Amaretti



As Missy wrote in her note, "You can never go wrong with Nutella and chocolate!" I agree!


She also included some homemade treats she calls power cookies! Yum!

If you are interested in participating in Foodie Pen Pals, here is the info:
-On the 5th of every month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal
-The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you are to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.
-Foodie Penplas is open to US & Canadian residents.  Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa. So, I’m going to keep two separate lists and match US w/ US and Canada w/ Canada!

I'll be back in awhile with some great recipes. I've felt really tired lately and worn down because of what's happened in our family. Grieving takes time and that's what I need. Until next time.

Saturday R&R with Chocolate-Chip Coffee Muffins



 I feel like I haven't blogged in forever. The last two weeks the company has been busy teaching in local Utah elementary schools and choreographing in High Schools. I however, choreographed for a group of students at an elementary school, so I was surrounded by kids all day long for two weeks. I was so exhausted when I came home at night. I have SO much respect for teachers and what they do/put up with for so little pay.......

So since it's Saturday and since I'm finally done teaching, the energy has returned! These muffins helped a bit too: Chocolate & Coffee in a low-fat muffin. The perfect way to start the weekend! These were in last months issue of Cooking Light. Seriously every recipe I've ever made from that magazine turns our great.


Chocolate-Chip Coffee Muffins
Makes 12 muffins
(recipe slightly adapted from Cooking Light)

Ingredients
2/3 cup 1% milk
  • 5 tablespoons butter, melted 
  • 3 tablespoons instant coffee granules (I used 4 packets of Starbucks Via)
  • 1 1/2 teaspoons vanilla extract
  • large egg, lightly beaten 
  • 2 cups all-purpose flour 
  • 2/3 cup sugar 
  • 1/2 cup semisweet chocolate chips
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt 

  • PREPARATION
  • 1. Preheat oven to 400°.
  • 2. Combine first 5 ingredients.
  • 3. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (through salt) in a large bowl; stir well with a whisk. Make a well in center of flour mixture. Add milk mixture to flour mixture; stir just until moist.
  • 4. Spoon batter into 12 muffin cups coated with cooking spray. Bake at 400° for 18 minutes or until done. Remove muffins from pan immediately; place on a wire rack.


I hope everyone else had a wonderful Saturday! I went to go see the movie/documentary PINA by Wim Wender. Go see it if plays in your city/town. There are some incredibly beautiful moments and I couldn't get over that I was watching dance on the big screen in 3D! Definitely worth the money and it's almost like you are watching the dancers live but you have the best seat in the house. Nothing is as good as seeing dance in person but this comes pretty close. Plus, it's nominated for as Academy Award for Best Documentary! "Dance, dance, otherwise we are lost."

A Recipe For Life

I haven't done a TILT (Things I'm Loving Thursday) in a long time and there are lot's of things I've been loving/enjoying lately. One thing is a forwarded email that I received in 2009 from my mom, printed out and have been saving since then. I've been looking on the Internet recently to try to find the author of this email but have had no luck. I printed this out because at the time I wanted to read it everyday as a reminder on how to live my life. Unfortunately, it got put in a pile and forgotten about until last weekend when I was going through some boxes. It couldn't have been a more perfect time to have found this. I actually have been reading this in the morning as a reminder to work on a lot of things on the list. One of my favorites is #7. I can let myself so easily be caught up in issues of the past, gossip, energy vampires and what I like to call toxic people. I need to let those things go and put my energy in the present moment. Life is too short not too. I think it's only human to at times get caught up in these things but it's so healthy to be aware of what you have done and try to change the way you live. So here instead of a food recipe is a recipe that hopefully will help you feel refreshed and empowered in your own life!


Recipe for Life



1. Take a 10-30 minute walk every day.  And while you walk, smile.  It is the ultimate anti-depressant.
2. Sit in silence for at least 10 minutes each day.  Talk to Higher Self, Universe,God or  Creator about what is going on in your life. Buy a lock if you have to.
3. When you wake up in the morning complete the following statement, ‘My purpose is to__________ today.  I am thankful for______________’
4. Eat more foods that grow on trees and plants and eat less food that is manufactured in plants.
5. Drink green tea and plenty of water.  Eat blueberries, wild Alaskan salmon, broccoli , almonds & walnuts.
6. Try to make at least three people smile each day.
7. Don’t waste your precious energy on gossip, energy vampires, issues of the past, negative thoughts or things you cannot control.  Instead invest your energy in the positive present moment.
8. Eat breakfast like a king, lunch like a prince and dinner like a
college kid with a maxed out charge card.
9. Life isn’t fair, but it’s still good.
10. Life is too short to waste time hating anyone.
11. Don’t take yourself so seriously.  No one else does.
12.  You are not so important that you have to win every argument. Agree to disagree.
13. Make peace with your past so it won’t spoil the present.
14. Don’t compare your life to others.  You have no idea what their journey is all about.
15. No one is in charge of your happiness except you.
16. Frame every so-called disaster with these words:  ’In five years, will this matter?’
17. Forgive everyone for everything.
18. What other people think of you is none of your business.
19. GOD/Higher Self, Universe or your Creator heals everything  - but you have to ask Him.
20. However good or bad a situation is, it will change.
21. Your job won’t take care of you when you are sick.  Your friends will. Stay in touch!!!
22. Envy is a waste of time.  You already have all you need.
23. Each night before you go to bed complete the following statements: I am thankful for__________.  Today I accomplished_________.
24. Remember that you are too blessed to be stressed.
25. When you are feeling down, start listing your many blessings.
You’ll be smiling before you know it.

We have performed for over 4,000 something children over the last two days. They get to come see our show on field trips for free because of generous donations to our company. I hope some of the kids who saw the show will be inspired to dance in the future or at least attend other arts events!
