Healthy Greek Salad
Oh my goodness!! This week off has turned into a crazy week. I have been busier than usual and have not been home the last three evenings. I have been choreographing at a local High School during the day and then running in the afternoons, followed by dinner out with friends/family at night. Tonight I have nothing and it's the last day of being at the High School. Tomorrow is a real day off! I might have to go get a pedicure for my poor abused dancer's feet!
At the High School their concert's theme is popular icons. Maybe it's because I've started this blog or just because I love to cook that one of the first people I thought of was Julia Child! I was afraid the students wouldn't know who she was but thanks to the movie Julie and Julia they did. I'm going to try to do a Julia Child recipe on here soon. Since things have been so busy around here lately, here is a quick and healthy greek salad. This is a great recipe that comes together quickly and makes a great lunch to take to work. We had it recently as a side salad served up with a veggie burger for a fresh and easy dinner.

serves 4
Ingredients:
1/2 small red onion, thinly sliced
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
coarse salt and ground pepper
1 medium cucumber, peeled and cut
into 1/2 inch pieces
1 cup grape tomatoes, halved
1/2 cup crumbled feta
1 can (15.5 ounces) chickpeas,
rinsed and drained
1/2 cup pitted Kalamata olives,
roughly chopped
1/2 cup lightly packed fresh parsley leaves
Directions:
In a large bowl, combine onion, lemon juice, and oil and season with salt and pepper. Toss well to combine and let sit 5 minutes. Add cucumber, tomatoes, feta, chickpeas, olives, and parsley; season with salt and pepper and toss to combine. Divide among four bowls and serve immediately.
