Happy National Chocolate Chip Day!
I don't usually share food holidays with you all but this is a special one. It's also one that I think should be celebrated any time, or any day of the year! It's National Chocolate Chip Day and to help you celebrate I made these vegan chocolate cookies.......really it was just a good excuse to make some cookies and I was craving chocolate. These are incredibly easy and utilize a lot of ingredients you probably already have in your pantry!
Vegan Chocolate Chip Cookies
Ingredients
½ cup coconut oil
1 cup brown sugar
¼ cup almond milk
1 tablespoon vanilla extract
2 cups flour (I used King Arthur White Whole Wheat Flour)
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup vegan chocolate chips (I didn't have vegan chips so just regular went in!)
Instructions
Pre-heat oven to 350 degrees Cream together the coconut oil & brown sugar, then add the almond milk & vanilla. In a separate bowl mix the flour, baking soda, baking powder and salt. Combine the wet & dry ingredients, then fold in the chocolate morsels & any other mix-ins of your choosing. Roll into Tbsp sized balls & place them on an ungreased cookie sheet, then flatten them out a bit with your palm. The dough may be a little crumbly, but just smoosh it together and it will work fine! Bake for 7-10 minutes. (9 minutes seemed just right!)
